Easy Gujarati Dal Dhokli Recipe for Beginners

- 2-3 pieces kokum (ya 1 tbsp lemon juice ya imli pulp)
- 2-3 tbsp jaggery (gur) – taste ke hisaab se adjust
- Fresh coriander leaves for garnish
For Dhokli (Dumplings):
- 1 cup whole wheat flour (gehun ka atta)
- ½ tsp carom seeds (ajwain) – digestion ke liye best
- ½ tsp red chili powder
- ¼ tsp turmeric powder
- ½ tsp salt
- 1 tbsp oil
- Water as needed (dough banane ke liye ~⅓ cup)
For Tempering (Tadka):
- 2 tbsp ghee or oil
- ½ tsp mustard seeds (rai)
- ½ tsp cumin seeds (jeera)
- Pinch of asafoetida (hing)
- 8-10 curry leaves
- 1 dried red chili (optional)
Step-by-Step Instructions (Beginners Ke Liye Easy)
Step 1: Dal Ko Pressure Cook Karo
Toor dal ko achhe se dho lo. Pressure cooker mein dal, 3 cups water, turmeric, salt, peanuts, aur ginger paste daal do. 4-5 whistles pe cook karo (medium flame pe). Whistle ke baad flame off kar do aur pressure naturally release hone do. Dal soft ho jayegi.
Step 2: Dal Ko Mash Karo
Cooker kholne ke baad hand blender ya mathani se dal ko smooth mash kar lo. Thoda pani add kar ke consistency thin soupy rakho (jaise dal chawal ke liye hoti hai). Ab tomato, green chilies, jaggery, kokum/lemon juice add karo. Low flame pe 5-7 min simmer karo taaki flavors mix ho jayein.

Step 3: Dhokli Dough Banao
Ek bowl mein atta, ajwain, chili powder, turmeric, salt, aur oil daal kar mix kar lo. Thoda-thoda pani daal ke medium stiff dough gundho (jaise roti ka atta, thoda tight). 10 min rest do.
Step 4: Dhokli Shape Karo
Dough ko chhote portions mein lo. Belan se 2-3 mm moti roti bela lo (dry atta lagakar). Knife ya pizza cutter se diamond shapes (1-1.5 inch) kaat lo. Extra dry atta jhad do taaki dal mein chipke nahi.
Step 5: Dhokli Dal Mein Simmer Karo
Dal jab boil ho rahi ho (medium flame pe), dhokli pieces ek-ek karke daalte jao (crowd mat karo). Dhokli upar aane lage toh samajh lo cooked hai. Total 10-12 min lagega. Dhokli soft hone chahiye lekin mushy nahi.
Step 6: Final Tadka Lagao
Ek small pan mein ghee garam karo. Mustard seeds crackle hone do, phir jeera, hing, curry leaves, red chili add karo. Yeh tadka dal-dhokli pe daal do. Fresh coriander se garnish karo.
Step 7: Serve Karo
Garam-garam serve karo – upar thoda ghee daal ke aur papad ke saath. Rice optional hai kyuki dhokli already carbs deti hai.
